Love this machine. It's not my first yogurt maker, so I've fine-tuned my preferences a bit. One, I want ceramic, not plastic, jars. I also prefer the water bath system -- I don't think it's critical, but it helps the yogurt be a little more consistent. I totally like that you can set the number of hours to culture your yogurt. I've tried different times, and, while they're ALL good yogurt, longer times get rid of more lactose and shorter times are a bit less tangy. Only problem with this and most yogurt makers is it only makes 1-1/2 quarts at a time, leaving you with some extra milk to deal with, and I don't drink milk. But it works well and I use it every week. (I don't heat the pasturized milk first, and this is no problem.)
